Anchovy Vinaigrette
When it comes to anchovies, most people either love 'em or hate 'em.

This simple, flavorful vinaigrette makes them easy to love and has been known to convert even a die-hard anchovy hater!

Ingredients:

7 Tbsp extra virgin olive oil
3 Tbsp sherry vinegar
1 Tbsp balsamic vinegar
1 tsp whole-grain mustard
½ tsp sugar
4 oz anchovy filets in oil, drained and minced
Salt & freshly ground pepper to taste

Directions:


Whisk together all ingredients in a large non-reactive bowl until thoroughly combined.

Toss with root vegetable salad, flavorful greens, over cooked, drained cannellini beans or drizzle on grilled meats, fish or vegetables.
