This has been handed down through my Missouri and Arkansas relatives for ages. It is the only way I know to preserve morels for any significant period of time.
Rinse mushrooms and let soak in salted water for a few hours to knock out bugs and other debris. Drain on paper towels.
Slice in half lengthwise from tip to stem.
Dip mushrooms in an egg wash with a little water. Roll in either flour or cracker crumbs. Put on a cookie sheet with wax paper.
Do not let them touch!
Flash freeze in regular freezer until set about 1 hour. Repeat until they are all frozen. Put them in a large freezer zip lock.
They will keep fine like this until ready to cook for about 6 months.
When ready to cook, fry them on high in bacon grease with some salt. Serve with bacon, toast and a glass of milk and
you can die happy.
