Apple-cucumber salad with Melfor Vinaigrette
This refreshingly different salad is inspired by a traditional dish which we often enjoyed with our Mexican friends in California. Called "pico de gallo," it features diced jicama, cucumbers, onions, salt, lime juice and crushed red chiles; sometime fresh chunked pineapple or melon is included too. Our version has more of a European twist, and is flavored by a unique Alsatian vinegar know as "Melfor". Its tangy sweet-sour flavor brings crisp sweet apple, tender delicate cucumber and slightly sharp Vidalia onion together in a harmonious blend of contrasting flavors and textures.
Ingredients:

1 Fuji apple, peeled, cored and sliced
1 medium cucumber, thinly sliced
1/4 cup thinly sliced Vidalia onion

Dressing:
4 Tbsp Melfor Seasoned Vinegar
3 Tbsp rice vinegar
3 tsp sugar (I used Turbinado)
2 Tbsp extra virgin olive oil
Sea salt & fresh black pepper

Preparation:
Whisk together, and pour over the salad, toss, cover and chill.
