Aux Delices des Bois Flat Herb Pancetta is similar to bacon, rolled and cured with bold, assertive seasonings like bay leaf and rosemary.

 

Ready to eat, fully cured Aux Delices des Bois Herb Pancetta (SOFI finalist Outstanding New Product 2011) can be thin sliced and eaten as is, without further cooking just like proscuitto. 

 

Though often referred to as "Italian bacon," pancetta is much, much more. While it is similar in many ways, pancetta differs from American bacon, which is ususally smoked. Pancetta is unsmoked pork belly that is cured in a special blend of salt and spices, then air-dried at very cool temperatures for several months.

 

Pancetta contributes its distinctive cured pork flavor to many traditional Italian dishes, such as pastas, without adding the smokiness of American bacon. Aux Delices des Bois Herb Pancetta also makes a superb substitute for guanciale, the Italian cured pork jowl that is a traditional ingredient in many classic pasta dishes.

Pasta Carbonara with Mushrooms
Rich, delicious and satisfying Pasta Carbonara is one of Rome's most famous dishes. Its origins are somewhat obscure, but it was almost certainly invented in the mid-20th century, most likely at the end of World War II when many Italians were eating eggs and bacon supplied by American troops. The classic elements of the dish are constant: eggs, cheese, black pepper and cured pork (usually guanciale or pancetta).

This is not a "saucy" dish - there is just enough of the rich, savory mixture of whole eggs, cheese and pancetta to coat each strand of spaghetti. Our version differs slightly from the traditional Italian recipe with the addition of mushrooms, but we think you'll agree that it adds a deliciously wonderful touch of flavor.

Hedgehog Stir-Fry
This recipe is for the more adventurous, since it doesn't include much direction regarding quantities. We came across it while reading through some "shroom" books, and it looked so good and so simple that we had to try it out just as soon as we could get some Hedgehog Mushrooms. Don't bet afraid of "winging" it a little, because this is an excellent way to eat this wonderful winter mushroom.
