Brie Baked in Puff Pastry
Try this out at your next dinner party and listen to the oohs & aahs!

Brie baked in buttery puff pastry makes a spectacular presentation (and tastes even better than it looks), but it's remarkably easy to prepare.

While wonderful with a simple accompaniment of fresh fruit, nuts or veggies, you can dress it up even more by topping the brie with your favorite preserves, tapenade or mushroom duxelle before encasing it in the flaky puff pastry shell.
Ingredients:

1 sheet frozen puff pastry, thawed
- OR -
1/2 recipe Rough Puff Pastry (click here for the recipe)
1 round of good quality Brie cheese, about 8 oz
1 egg yolk, beaten with 1 teaspoon water

Directions:


If using frozen puff pastry: Set out frozen puff pastry for about 20 minutes before use.

Roll the pastry out to about 1/8 inch in thickness.


Place the brie in the center of the puff pastry. Cut a large circle around the brie, extending 4-6 inches past the brie on all sides.  Reserve the leftover puff pastry for decoration, if desired.  Bring one edge of the pastry up to the middle of the round of brie.  Working around the edges, bring up folds or "pleats" of pastry,  crimping the edges together, to seal the entire cheese within the pastry.  Turn the crimped side of the dough down on a lightly greased baking sheet.

   

Use the remaining dough to cut out leaf or flower designs as decorations. Place the design on top of the dough-covered brie and refrigerate until ready to bake.  This can be kept overnight if covered with plastic wrap.  Remove the plastic when ready to bake.

 

Beat the egg yolk with the water and lightly brush the entire dough covered brie.  

 

Preheat the oven to 400 degrees F and bake for about 15-20 minutes or until the crust is crisp and golden brown.

 

Remove from the oven and let the baked brie rest for at least ten minutes before serving it with fresh fruit, toast points, crackers, or raw veggies.

 

Variations:  Before covering the brie in puff pastry, try spreading the top with a tablespoon or two of your favorite preserves, pesto, tapenade or sauteed mushrooms.
