Balsamic-Wild Leek Vinaigrette

Balsamic-Wild Leek Vinaigrette is low in fat, but high in flavor! Pickled wild leeks pack a piquant punch when paired with pepper and dry mustard. (Say that 5 times, fast!)
Add a little balsamic vinegar and olive oil to round things out and you've got a tasty and zesty vinaigrette that is perfect with tossed greens, grilled vegetables or a seafood salad.

Ingredients:

1/4 cup pickled wild leeks, coarsely chopped

1/4 cup water

1 1/2 Tbsp balsamic vinegar

2 Tbsp olive oil

1/4 tsp dry mustard

1/4 tsp black pepper

1/8 tsp sea salt



Preparation:

Combine ingredients in a blender, and process until smooth.
