Basil Shrimp with Feta and Orzo
This Mediterranean-inspired dish can double as a pasta salad next day...if there is any left, that is. The delicious combination of tomatoes, feta, basil and shrimp is healthy and pretty. It is very versatile in that you can vary the fresh herbs, such as tarragon, parsley and oregano, or try some goat cheese in place of the feta for another excellent alternative. Let your imagination and ingredients on hand be your guide.

1/2 cup uncooked orzo
2 teaspoons extra virgin olive oil,
1 cup fresh tomato, diced
3/4 cup scallions, washed, trimmed, and sliced
3/4 cup feta cheese, crumbled
1 teaspoon grated lemon peel
1 Tablespoon fresh lemon juice
1/4 teaspoon sea salt
1/4 teaspoon fresh cracked pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil (dried basil won't work!)


Preheat oven to 450 degrees F. Grease a large, lidded casserole dish.

Cook the orzo in boiling water for five minutes (do not salt!). Drain thoroughly and place in a mixing bowl.

Stir in 1 teaspoon of oil and the next seven ingredients and combine thoroughly.

Combine the shrimp and the basil and arrange on top of the orzo. Cover casserole dish and bake for about 25 minutes, or until the shrimp are cooked through.

Drizzle with the remaining teaspoon of olive oil and serve piping hot. Serves two.
