Beef Chestnut Wellington
Our Earthy Delights panel of judges raved over this clever recipe which adds the tender texture and mild flavor of chestnuts to a classic presentation.

First Prize Winner 2015 Chestnut Recipe Contest

1 tbsp vegetable oil
4 shallots, chopped
1 pound ground beef
2 oz cooked chestnuts, chopped
2 oz mild blue cheese, crumbled
1.5 oz fresh breadcrumbs
2 tbsp caramelized onion chutney
Bunch of fresh parsley, chopped
1 medium egg, beaten
1 roll Puff Pastry
sea salt


Preheat oven to 400F

Heat 1 tbsp vegetable oil and soften 4 chopped shallots. Remove and cool.

Mix the cooled shallots with the seasoned ground beef, chopped chestnuts, blue cheese, breadcrumbs, onion chutney, parsley and egg.

Roll the pastry to 13" x 7." Shape the mix into a 12" sausage and lay on the pastry. Brush the long edge with beaten egg, then bring the pastry over to seal.

Score lines on top, brush with more egg, sprinkle with sea salt and bake for 40 minutes
