Description 

 

Black sesame seeds are used primarily in Japanese and Chinese cooking, usually as a garnish, but also in desserts and puddings. They have a more distinctly pronounced flavor than the common white sesame seeds. One traditional Japanese condiment, gomasio, is made from black sesame seeds mixed with salt.

Today, versatile and elegant black sesame seeds have found a place in the western kitchen as well. Use them with salads, fish, poultry and meat dishes, add to stir frys, cakes, cookies and breads.

Soba Noodles with Roasted Matsutake Mushrooms
This recipe doesn’t stray too far from traditional, Japanese-style soba dishes. It features the fabulous matsutake mushroom, which quite literally means “pine mushroom” in Japanese (matsu = pine + take = mushroom). Matsutake mushrooms grow in association with certain species of pine trees, a fact that is clearly evident in their appealingly spicy, piney aroma and flavor. Matustake also have a very firm texture, which makes them excellent candidates for roasting. A short marinade in soy sauce and mirin, followed by a quick roasting in a very hot oven concentrates and intensifies their wonderful flavor.

Pan-fried Shishito Peppers
Pan-fried shishito peppers are a great nibble with drinks, and they’re easy to prepare. However you cook them, it’s a good idea to puncture each pepper before cooking to vent rapidly expanding hot air that could cause the cooking pepper to burst. Shishito peppers can be used any way you’d use any other chile pepper, but they’re small size makes them particularly good in appetizers or as a garnish with other dishes. You’ll often see shishito peppers pan-fried in a little oil and served as an appetizer or with drinks. They’re also wonderful when skewered and grilled on the barbecue.
