Bowfin is one of North America's truly great caviars. It comes from a primitive fish called the bowfin, one of only three true caviar producing species found in the United States. Bowfin caviar is a distinctly American caviar,  as the bowfin sturgeon lives in rivers and bayous around Louisiana where it is also known as "choupique" (pronounced shoo-pick), from a Native American word.

Bowfin caviar is deep black in color with small "berries" and its naturally superior flavor requires very little salt in its production.

Bite-sized Potato-Apple Pancake Canapés
Potatoes, apples and onions are frequent companions in many hearty mid-European dishes and they don’t fail to please in this delightful version of the traditional potato pancake. While apples are not a typical ingredient in most potato pancake recipes, their delicate texture and mild sweetness makes this version a little lighter and tastier than others.
