Bowfin is one of North America's truly great caviars. It comes from a primitive fish called the bowfin, one of only three true caviar producing species found in the United States. Bowfin caviar is a distinctly American caviar, as the bowfin sturgeon lives in rivers and bayous around Louisiana where it is also known as "choupique" (pronounced shoo-pick), from a Native American word.
Bowfin caviar is deep black in color with small "berries" and its naturally superior flavor requires very little salt in its production.
