Not only is Bowfin one of North America's truly great caviars, it ranks among the world's best. It comes from a primitive fish called the bowfin, one of only three true caviar producing species found in the United States. The bowfin lives in rivers and bayous around Louisiana where it is also known as "choupique" by the locals (pronounced shoo-pick), from a Native American word that means "mud fish."

 

Bowfin caviar is deep black in color with small "berries" and its naturally superior flavor requires very little salt in its production.
