Brandied Cheese, Walnut, and Pear Crostini
This is a truly elegant holiday dish, especially when paired with a bowl of fresh grapes. It's rich and hot and absolutely marvelous served with a dry white wine in front of a crackling fire.
Ingredients:
4 Ounces crumbled Blue Cheese
2 Tablespoons unsalted butter
2 Tablespoons brandy
¼ Cup chopped walnuts
16 French bread slices, about ¼ inch thick
1 Medium ripe pear, cored and sliced thinly
Preparation:
Bring the blue cheese and butter to room temperature. Mash them together with a fork until well-combined
Stir in the coarsely chopped walnuts and brandy.
Top each slice of French bread with a slice of pear, then top with 1 tablespoon of the cheese mixture.
Place the bread slices on a baking sheet and broil about 5 inches from heat for about 2 minutes. Watch carefully, as they burn easily. When the cheese is bubbly and melted, remove from heat. Serve hot.
Makes 8-12 servings.
