Breaded Morels

So simple, yet delicious!

Ingredients:

12 large fresh Morel mushrooms

1 beaten egg

1/2 cup flour

Sea salt & freshly ground black pepper to taste

2 tablespoons butter



Preparation:

Choose a dozen or so of the largest morels of the harvest. Slice lengthwise and soak in cold lightly salted water for 15 minutes. Rinse and drain well on paper towel.

Heat butter in a skillet over medium heat until hot.

Dip morels in beaten egg, then in flour. Sprinkle with salt and pepper to taste.

Place the mushrooms into the hot butter, a few at a time, and cook 2-3 minutes (turning as necessary) until crisp and golden.

Drain on paper towels and keep hot in a low oven while frying the remaining mushrooms.

Serves 4-6 as an appetizer
