Flax has an ancient history which stretches back at least 8000 years. Grown throughout much of Asia and Europe, flax has been valued both for its edible seeds and strong, durable fibers. Not only does flax seed have a wonderfully nutty, mild flavor, it's also very healthy. Flax Seed has high levels of both soluble and insoluble fiber, and is rich in Omega-3 fatty acids.
Flax seed can be enjoyed in many ways. Sprinkle it over cereal, stir fry and hot grain dishes. Sprout flax seeds and add them to salads or sandwiches! Use flax seed whole or ground for flour in breads.
Basic preparation: To prepare flax seed, simply simmer 1 cup with 2 cups of water for 30 minutes or until soft. Flax seed may be toasted prior to cooking for a rich nutty flavor. One cup dry yields 1-1/2 cups cooked. Flax seed may also be ground into flour and added to a recipe for baked goods. Try it - you'll like it!
