Cherry-Almond Couscous
Consider this: the sweetness of dried cherries and the
moderate burn of chopped scallions. Add the texture of
crunchy almonds and mix everything with couscous. This
very simple dish creates a healthful palette of flavors
that goes wonderfully during the summer with a bowl filled
with tossed greens. Add some cheese. Add some wine. Add a
view and there's nothing left to wish for.
Ingredients:
4 scallions, chopped, reserving the green portion for
the garnish
3 cups couscous
2 tablespoons extra virgin olive oil
1/3 cup dried cherries
1/3 cup toasted almond slivers
3 cups boiling water
Sea salt & freshly ground Black Pepper to taste
Preparation:
Mix the scallions with couscous, olive oil, and the dried
cherries.
Boil the water and add to the couscous mixture.
Stir quickly, cover with plastic wrap, and allow to stand
for about 30 minutes. Fluff with a fork and add almonds.
Check for seasoning.
