Chestnut Stuffed Mushrooms

2 large portabello mushrooms
1 oz butter
1 tbsp olive oil
2 sprigs thyme, leaves picked from stems
1 tbsp madeira sherry
1 medium onion
2 Italian sausages
1 sprig rosemary
2.5 oz breadcrumbs
2.5 oz chestnuts, cooked
Cheese for topping (cheese of your choice)


Preheat the oven to 350F

Remove the stalks from the mushrooms and place in a baking dish. Place a little knob of butter in each one and drizzle with the olive oil. Sprinkle with the thyme and sherry. Bake in the oven for 20 minutes.

Chop the onion and soften in a skillet with a little butter until golden. Remove the sausage skins and break the meat into the pan with the onion. Add the rosemary and breadcrumbs and allow to cook slightly. Chop the chestnuts and add to the pan and mix well.

After 20 minutes remove the mushrooms and heap your stuffing into the mushrooms, piling it as high as you dare. Return the dish to the oven for 15 minutes, then sprinkle with the cheese of your choice and cook for another 10 minutes.
