Chow mein is classic Chinese comfort food! The basic preparation involves browning cooked noodles on both sides. This results in a delicious noodle dish with an interesting texture - crisp & crunchy on the outside, while tender & chewy on the inside.

Here's a simple recipe for preparing chow mein noodles:
Basic Chow Mein Noodles
1 package chow mein noodles
2 1/2 Tbsp vegetable oil
1 tsp Asian sesame oil
First, cook the noodles in 8 cups of boiling water until tender. Drain the noodles in a colander and rinse thoroughly in cold water. Drain again and toss with the sesame oil.
Next, heat the vegetable oil in a 12-inch non-stick saute pan over medium-high heat. Make sure that the oil coats the bottom evenly.
When the oil is hot, add the noodles to the pan. Press the noodles down firmly with a spatula and cook until golden brown, about 5 minutes.
If you are adept with a saute pan, you can simply flip the noodles as you would a pancake or omelet. If you don't feel comfortable with that method, place a plate over the noodles and invert the pan so that the noodles fall onto the plate, browned side up. Add a little more oil to the pan if needed and slide the noodles back in.
Continue to cook, pressing down with the spatula, until the noodles are golden brown on the bottom.
Slide the noodles out of the pan onto a serving plate and top with your favorite chow mein or stir fry recipe. That's it!
