Curried Ham and Jasmine Rice
Just the name Jasmine makes this dish sound elegant, but the truth is that it's nothing but a very good way to serve leftover ham. Serve this on de-crusted toast points. Because it's a very flavorful dish, it would benefit if it were served with fresh fruit, tossed greens, and a baguette of French bread.
Ingredients:
1 1/4 cups of hot cooked Jasmine Rice, prepared according to package directions
2 tablespoons butter
1 1/2 cups diced cooked ham
1 hard cooked eggs, chopped
1 teaspoon curry powder
2 tablespoons fresh chopped parsley
1/4 cup heavy cream
Sea salt & freshly ground Black Pepper to taste
Preparation:
Combine all ingredients in a large skillet over medium heat.
Heat thoroughly. Serves about 4.
