Deep Fried Morels
This is one of my favorite ways to eat morels. It's easy, it's foolproof, and it's a big favorite with just about everyone.
Soak the morels briefly in cold salted water, then drain and gently rinse under cool running water. Drain and pat dry.
In a deep pan, heat 2 inches of oil to about 370° Fahrenheit. Dip the morels into the beaten egg mixture, then dredge in the cracker crumbs.
Drop the mushrooms into the hot oil, cooking for about four minutes, turning several times while cooking. When the mushrooms turn golden brown and are floating in the oil, remove them to drain.
Salt to taste and then devour.
