Double Chestnut Milk Chocolate Truffles
Chestnuts add both flavor and creamy texture in this clever take on chocolate truffles

Ingredients:

1 cup roasted, shelled and peeled fresh chestnuts, divided
1 cup milk chocolate chips, melted
1/2 teaspoon almond extract

Directions:

Puree half of chestnuts in a food processor until consistency of mashed potatoes. Place in medium mixing bowl.

Add melted chocolate and almond extract. Stir well to evenly blend ingredients. Cover and refrigerate 30 minutes or more.

Finely chop remaining nuts and place in a shallow dish. Take 1 tablespoon size portions of chestnut-chocolate mixture and roll with your hands into balls. Roll balls lightly in chopped nuts and place on a plate and refrigerate until hard. Serve chilled.

Makes 12. Serves 4-6.
