The dried mushroom commonly known as the "china bolete" (boletus granulatus, suillus granulatus, suillus luteus) is a much less expensive alternative to European & North American porcini mushrooms. In its fresh state, this mushroom is frequently referred to as the "Slippery Jack."  Most frequently used when dried, fragrant and flavorful dried china boletes have an intense and pleasant aroma with notes of caramel, vanilla and spice.

 

You'll be surprised and pleased at how well this affordably priced mushroom performs in any dish calling for dried porcini, cepes or boletes.

A departure from the usual bread stuffing, this mushroom stuffing gives it a "special" flair, but the process is still simple enough that you won't be spending all day in the kitchen.

Risotto with Porcini & Saffron

Wheatberry Pilaf with Porcini Mushrooms
This is a hearty dish which goes exceptionally well with poultry, pork, or with beef. The neutral flavor of the grain is made interesting and complex by adding mushrooms and herbs. This is an excellent main dish for vegetarians, and makes a wonderful meal after spending a cold day outside.

As a whole grain food, wheatberries are high in fiber and very healthful.
As a side dish, this will serve about six.
