Description

Dried hibiscus flowers (Hibiscus sabdariffa) is much used in Mexico and the Carribean, dried and infused to make drinks, sometimes rehydrated and cooked with other ingredients. In the United States, dried hibiscus flowers are used to brew a refreshing, intensely flavored, deep ruby red tea. Hibiscus tea is a favorite beverage south of the border where it is known as flor de Jamaica.

In Costa Rica and Central America, the sweetened hibiscus drink is fermented into a mildly alcoholic beverage that looks like red wine.

Dried hibiscus flowers are remarkable for being a concentrated source of Vitamin C, antioxidants, and gel-forming pectin.

Grilled Salmon with Rhubarb-Hibiscus Sauce
The unique flavor of rhubarb has made it an old-time favorite ingredient in pies & desserts, but it's also fantastic in tangy sauces to accompany savory dishes.

In this recipe, the delightfully tart acidity of rhubarb provides a pleasant counterpoint to the richness of grilled wild salmon, but the sauce would be equally good with roast pork or duck.

Hibiscus Royale Champagne Cocktail
Sparkling wine infused with the refreshing, gently floral flavor of hibiscus makes a simple, but charmingly elegant cocktail for any occasion.

If you're planning a special brunch or lunch this Mother's Day, treat Mom to this pretty and stylish twist on a Champagne cocktail. And for those who don't drink alcohol - adults or children - you can substitute ginger ale or sparkling apple juice. Our recipe is intended to be made in individual glasses, but you can make it by the pitcher as a Champagne punch and easily serve everyone at the table.
