Oyster mushrooms, or " the shellfish of the woods", named for their oyster-like shape, have a moderately robust flavor, and are delicious sautéed or in soups and sauces. Oyster mushrooms often grow in large over-lapping rows like tiles on a roof. The oyster mushroom's meat is thick and mild in flavor. From your first taste of this mild but flavorful fungus, you will want to use it frequently. It can be substituted in any recipe that calls for mushrooms.

 

Oyster mushrooms are a popular exotic mushroom. They have a delicate texture and just a hint of seafood in their flavor. Originally wild harvested,growing from the side of tree trunks, Oyster mushrooms are now widely cultivated.

Oyster mushrooms are perfect in a fish chowder or in a sauce for meat or poultry. Also excellent in mushroom soup, risottos, and quiche.
