Wakame is a seaweed traditionally used primarily in Japanese cooking, but now used widely in East-West fusion cuisine. Commonly used in soups, salads and stirfrys, Wakame looks and tastes like a slippery spinach. When soaked in water, dried wakame expands to at least 10 times its dried size.
Typical Preparations:
Dried wakame is usually reconstituted before use by placing the desired quantity in a bowl with water. After soaking for 30 minutes or so, the rehydrated wakame is drained and chopped into bite-sized pieces before use.
