Black Lentils (Lens esculenta) are a very popular legume in South Asia, where they are used to make a beautiful black lentil soup. Black Lentils have a mild, earthy flavor and soft texture, yet they don't easily fall apart as do other lentils.

Suggested Use:
The quick cooking and nutritious nature of lentils make them an obvious choice for winter soups. They're delicious in chilled vegetable salads, or mix with bread crumbs, minced onion and garlic to stuff roasted red peppers or eggplant.

Basic Prep:
Lentils do not require soaking. Simmer 1 cup lentils with 4 cups water 12 minutes for salads, 20 to 30 minutes for main dishes, drain. Skim the water while cooking. One cup dry yields 2 cups cooked.

Black Lentil Salad with Goat Cheese
Black lentils, like French Green Lentils (lentilles du Puys), differ from other "garden variety" lentils in several ways. Black lentils retain their lens-like shape and firm pleasant texture when cooked, making them a good choice for salads. They're much smaller, too - only about 1/8th-inch or so in diameter. Black lentils cook very quickly, requiring only about 15 - 20 minutes to cook to a pleasant 'al dente' consistency.

The natural deep ebony color of black lentils fades to an attractive rich nut-brown hue during the cooking process. Their mild, but distinctive "legume" flavor melds beautifully with vinaigrettes and marinades, and accommodates itself well to soups and stews too.
