Whole lobes of fresh Foie Gras seasoned, cooked, marinated in Armagnac and then prepared "Au Torchon," a classic method of presenting foie gras. The preparation is so-named after the cloth (torchon simply means dish towel in French) used to tightly wrap the foie gras into a round shape.

 

This classic preparation perfectly highlights the rich flavor and smooth texture of one of the world's greatest delicacies.
