Grown by the Ferron family, sixth-generation rice farmers since 1650, Vialone Nano is a preferred risotto rice with small, rounded grains, rich in amylose (23.8%) and very compact, allowing them to expand greatly during cooking. An ideal rice for no-stir risottos and rice salads, it is prized for its soft, light body. Its shorter, "no stir" cooking time makes it highly prized by cooks on the go.
Ferron Carnaroli rice receives minimal processing in the traditional family mill in use since 1650.
