Fettuccine with Morels

Fettuccine with Morels
Though many people like their morel mushrooms sautéed and served with toast, there's another entire camp of 'shroomers who love the undeniably delightful experience of enjoying them with pasta. Pasta is a natural background for fine quality mushrooms, and morels pair excellently with fettuccine.
Ingredients:

2 ounces grated fresh Parmesan cheese
2 ounces butter
1 cup heavy cream
1 teaspoon chopped garlic
1 tablespoon chopped parsley
7 ounces fresh Morel mushrooms, cleaned, trimmed, and chopped
sea salt & freshly ground black pepper
fresh thyme to taste
fettuccine



Directions:


Cook the fettuccine according to package instructions. Strain and set aside.


Using a medium size skillet, sauté the onion, garlic, mushrooms, and morels in butter.

Add the pasta and the cream and cook for about four minutes.

Add the remaining ingredients, including the Parmesan.


Serve immediately.
