Perfect and beautiful slender spears of hand-selected baby white asparagus are unlike anything you've ever seen or tasted. At over 140 spears to the pound, this asparagus is the tiniest ever!

Baby White Asparagus is the essence of spring. Unlike traditional "fat" white asparagus, there is no need to peel melt-in-your-mouth tender baby white asparagus. At its best when lightly steamed or served raw, baby white asparagus makes a stunning presentation when used as a garnish, on a delicate salad, or served as a vegetable for your special dinner guests.

Baby white asparagus is grown in Washington State by a patented indoor growing method. The asparagus crowns are "forced" in a special darkened growing room and are carefully hand-harvested. This unique growth process is highly labor intensive and production is very limited.

Cornish Game Hen with Asparagus and Morels
Cornish hens are excellent for pan roasting because they're so small. They typically go well with sauces, and are often glazed with a reduced orange sauce, complete with orange zest and Cointreau. In this case we're using a dusky, earthy morel sauce that has an exquisite mild flavor. A side of wild rice is a perfect accompaniment - the flavor blends perfectly with the hens and the texture is excellent.
