Perfect and beautiful slender spears of hand-selected baby white asparagus are unlike anything you've ever seen or tasted. At over 140 spears to the pound, this asparagus is the tiniest ever!

Baby White Asparagus is the essence of spring. Unlike traditional "fat" white asparagus, there is no need to peel melt-in-your-mouth tender baby white asparagus. At its best when lightly steamed or served raw, baby white asparagus makes a stunning presentation when used as a garnish, on a delicate salad, or served as a vegetable for your special dinner guests.

Baby white asparagus is grown in Washington State by a patented indoor growing method. The asparagus crowns are "forced" in a special darkened growing room and are carefully hand-harvested. This unique growth process is highly labor intensive and production is very limited.

Foodwriter David Rosengarten says of Baby White Asparagus, "...amazing texture, crisp, light...the sweetest asparagus I've ever tasted".

Wild Mushroom, Asparagus & Arugula Quesadilla
Our basic recipe makes ONE quesadilla, enough for a single person as a light meal or for 2 – 4 people as an appetizer. Just double, triple or quadruple the recipe to feed more hungry mouths! Use any soft-melting cheese, such as Swiss, mozzarella, Monterey Jack or try our favorite, Muenster. Have all of your ingredients prepped and ready to go before you begin cooking the quesadillas. Once you begin, things go very fast – about 5 minutes from start to finish.

Crayfish with Asparagus and Morels
The flavors of spring are delicate. The first tender emerging shoots and mushrooms usually don’t have the robust flavors of summer’s produce and need careful handling to bring out their best qualities. There are exceptions, of course. The first ramps of the year are thought by many to be the most potent and pungent of the season. But many other wild spring foods – morel mushrooms, fiddlehead ferns, wild asparagus and the like – are best appreciated when lightly cooked and seasoned, allowing their gentle flavors to shine through.

White Asparagus & Roasted Mushroom Salad
This is a particularly excellent recipe because it is so versatile and mixes several unusual flavors. Arugula has a peppery flavor that mixes with the asparagus, the mushrooms, and the garlic to create a dream salad. This is not a difficult recipe. It takes only minutes to put together and it makes a spectacular first course, or a side dish to an elegant dinner.
