Description

Perfect and beautiful slender spears of hand-selected baby white asparagus are unlike anything you've ever seen or tasted. At over 140 spears to the pound, this asparagus is the tiniest ever!

Baby White Asparagus is the essence of spring. Unlike traditional "fat" white asparagus, there is no need to peel melt-in-your-mouth tender baby white asparagus. At its best when lightly steamed or served raw, baby white asparagus makes a stunning presentation when used as a garnish, on a delicate salad, or served as a vegetable for your special dinner guests.

Baby white asparagus is grown in Washington State by a patented indoor growing method. The asparagus crowns are "forced" in a special darkened growing room and are carefully hand-harvested. This unique growth process is highly labor intensive and production is very limited.

Foodwriter David Rosengarten says of Baby White Asparagus, "...amazing texture, crisp, light...the sweetest asparagus I've ever tasted".
("The Rosengarten Report", Issue Number 28, June 7, 2004)

Recipes

Cornish Game Hen with Asparagus and Morels
Cornish hens are excellent for pan roasting because they're so small. They typically go well with sauces, and are often glazed with a reduced orange sauce, complete with orange zest and Cointreau. In this case we're using a dusky, earthy morel sauce that has an exquisite mild flavor. A side of wild rice is a perfect accompaniment - the flavor blends perfectly with the hens and the texture is excellent.

Asparagus and Mushroom Salad
In Michigan, we're spoiled when it comes to asparagus. Our asparagus, simply stated, is divine. It should be crisp, tender, flavorful, and not at all stringy. This is another wonderful course for hot weather - nourishing, high in fiber, and refreshing.

White Asparagus & Roasted Mushroom Salad
This is a particularly excellent recipe because it is so versatile and mixes several unusual flavors. Arugula has a peppery flavor that mixes with the asparagus, the mushrooms, and the garlic to create a dream salad. This is not a difficult recipe. It takes only minutes to put together and it makes a spectacular first course, or a side dish to an elegant dinner.

Asparagus Benedict With Miso-Butter
This luscious dish is adapted from a recipe by New York chef David Chang. We've spun it into something a little more familiar to most of us - probably the most famous brunch dish of them all, Eggs Benedict. Our version replaces the usual Hollandaise sauce with an equally rich, equally tasty Miso Butter. Make this dish all your own by adding other ingredients - Canadian bacon or pancetta, smoked salmon or maybe even crab, lobster and/or truffles.

Blackened Grouper with Asparagus and Morels
Grouper, a moist, firm, yet flaky fish, with a sweet mild flavor really benefits in this style of blackening. Served with the earthy, rich flavors of morels, the bright green taste of asparagus, the creamy fingerlings and firm snap peas, a finely tuned orchestra titillates the senses of taste, sight and smell. The fussiness of this recipe is well worth the effort.

Softshell Crab with Grilled Ramp Dressing
Softshell crabs are a rare treat, when you can find them. Combined with ramps and fresh asparagus, they are delicious beyond description.

Two things to remember about this recipe: 1) it includes a raw egg warning,* so use only refrigerated, clean, sound-shelled, fresh, grade AA or A eggs. Avoid mixing yolks and whites with the shell.
2.) the recipe calls for Emeril's Creole "essence" also called "Bayou Blast." Recipe follows.
