are small, crisp, tan-skinned white tubers with a crisp texture and mild nutty, artichoke-like flavor. Crosnes (pronounced "crone") are unusual tubers that grow like potatoes and resemble sunchokes in flavor, texture, and use.
How to use crosnes:
First, trim the tips of the crosnes, both top & bottom. Remove the skin by laying them out on a towel and sprinkling with coarse salt. Rub together to remove most of the skin and rinse under cold water.
Blanch briefly in salted water, then chill. Finish by sauteing in butter or oil, pickle in a mixture of spices and vinegar or batter and fry tempura-style.
