These beautiful fiddleheads (Ostrich Fern, Matteuccia struthiopteris) come straight from the wilds of Minnesota to us.  Hand-harvested with their long, succulent stems intact, these striking and minimally processed fiddleheads make a real statement, no matter how you serve them. 
PLEASE NOTE: These fiddleheads have their "chaff" intact and will require a little more effort than the "standard" Eastern fiddleheads to prep them for use (see below), but their freshness, high quality and unique appeal make them well worth the miminal extra cost and labor.
Basic preparation: Rinse well in cold water, rubbing gently to remove the papery brown chaff (normal for wild fiddleheads). If desired, trim the tip of the stem to clean them up, but it's not necessary. Prepare a pot of boiling salted water at least twice the volume of the fiddleheads.  When the water comes to a rolling boil, add the cleaned, prepped fiddleheads.  Return to a boil, reduce heat slightly and cook for 1 - 2 minutes.  Drain and plunge into cold water.  Drain again and the fiddleheads are ready to use in any recipe.
