The White Clamshell Mushroom is one of the many varieties of cultivated mushrooms known in Japan as Shimeji. Beautifully ivory white in color, the White Clamshell or "Alba" Clamshell Mushroom adds drama and elegance to any presentation.The subtle flavor of the White Clamshell Mushroom is typical of most related varieties, but is slightly more pronounced than in its Brown counterpart. The mushroom grows in clusters with slender stems ranging up to 3 or 4 inches in length with petite button-like caps. Most of the stem of the White Clamshell Mushroom is edible, requiring only minimal trimming at the base.
