Fresh Black Truffles from sub-Himalayan Asia (t. indicum, t. sinensis or t. himalayensis) are commonly known as "Chinese Truffles".

While Chinese truffles are less pungent than the European truffle, they can still be a good - and affordable - choice for truffle lovers on a budget.

Chinese truffles have gotten some bad press over the years, since the days when unscrupulous truffle dealers often tried to pass them off as their more expensive European cousins, t. melanosporum and t. aestivum.

But Chinese truffles have nothing to be ashamed about. The overall quality of Chinese truffles has improved enormously in recent years and many experienced truffle lovers have become fans of this less expensive member of the truffle family.

Very similar in appearance and flavor to the European Summer Truffle (t. aestivum) and the Burgundy Truffle (t. uncinatum), the Chinese truffle is worthy of consideration and should not to be dismissed as inferior.

Even though they are somewhat less pungent than the European truffle, Chinese Truffles are still a good choice for many dishes. Their inexpensive price also makes them a great choice for first-time truffle experimenters!

Fresh Truffles are shipped packed in rice which will become infused with truffle flavor and aroma. We recommend using it in your favorite risotto recipe.

Store fresh truffles in the refrigerator in the rice in which they were shipped. Fresh truffles are best used within approximately one week after they arrive.
