With a black exterior and dark brown flesh mottled with white veins, Burgandy truffles (Tuber uncinatum) have a delicate but distinctive aroma.

Burgundy truffles, harvested in southern Italy, are quite similar to other black truffles in appearance. Because their flavor and aroma is light and delicate, they are best used uncooked and are typically shaved raw over pasta, rice, egg or potato dishes, and as a finishing touch to sauces or meat dishes.
