Black Winter Truffles (Tuber melanosporum) have been prized for centuries. With a black exterior and grey colored flesh, they have a distinctive and powerful aroma. Harvested from November to March, black truffles are typically served fresh with pasta, risotto, eggs, potatoes or meat dishes.
Store fresh truffles in the refrigerator. Fresh truffles are best used within approximately one week after they arrive.
