Highly prized in Mexico and Asia, cuitlacoche is a mushroom-like fungus that lives on corn that makes corn kernels swell to 10 times their normal size. The ancient Aztecs are said to have prized Cuitlacoche long before Europeans arrived in North America. It's smoky-sweet flavor has been characterized as similar to that of white mushrooms, but with the additional sweetness of corn.
Cuitlacoche is used in a variety of traditional Latin American dishes such as soups, sauces, with rice and as a filling for tortillas, but may be used in any preparation where cooked mushrooms would be appropriate.
