Green Beans with Lemon Brown Butter
This dish is simple, simple, simple, taking about ten minutes from start to finish. It's been adapted from a recipe in the November issue of Gourmet Magazine. It brings out the very best in the green beans, and is an excellent complement to turkey. This makes about four servings.
Ingredients:
1 pound green beans, trimmed and washed
2 teaspoons Sea salt
8 teaspoons unsalted butter
6-7 teaspoons freshly squeezed lemon juice
Preparation:
Boil the beans in salted water for about three minutes, or until "crisp-tender." Drain in a colander.
Melt the butter for about two minutes over moderate heat in a medium size skillet. Stir in the lemon juice and a dash of salt.
Remove the pan from the heat, add the beans, and toss well.
