Grilled Sopressata Sandwich with Red Pesto
This amazingly delicious sandwich made with sopressata, a tangy cured pork salami, is a delight to the senses! Not only is it wonderfully tasty, the aroma of truffles is sure to set your mouth watering before you take your first bite.

The sopressata is so flavorful that a little bit goes a long, long way. Combined with nutty Emmenthaler cheese and truffle-y red pesto, it makes an incredibly intense, flavor-packed sandwich.

4 thick slices Italian bread
2 - 3 Tbsp red pesto with truffles
2 oz Emmenthaler or Swiss cheese, sliced
2 oz thinly sliced Truffle Sopressata (or more, to taste)
2 Tbsp unsalted butter



Preheat a griddle or large, heavy pan over medium heat.


Generously butter each slice of bread on one side. Spread the pesto on the other side of each slice of bread. Place several slices of cheese on the pesto side of each piece of bread. Add a single layer of sopressata and put the two halves of the sandwich together.


Place the sandwich in the preheated pan. Grill 5 minutes on each side or until the cheese is melted and the bread is toasted golden brown. Cut in half, serve immediately and enjoy!
