Grilled Tuna Steaks with Citrus-Soy Sauce
East meets West on the barbecue grill!
This savory citrus-soy sauce is a perfect complement to the rich flavor and meaty texture of fresh tuna steaks that have been seared to medium-rare on a hot grill.
With the thick tuna steaks cooking for just a single minute on each side, this entire dish takes less than 20 minutes to prepare, sauce included.
In a small bowl, mix together the soy sauce, mirin, shallot, pepper flakes, lemon & yuzu juice, lemon peel and sugar. Pour into a medium size non-reactive saucepan and simmer over moderate heat until reduced by half, about 10 - 15 minutes. Remove from the heat, pour through a strainer to remove the solids while pressing down with the back of a spoon to extract all the liquid, and set aside.
Place the tuna steaks on a large plate and season with a little salt and pepper. Drizzle with olive oil, turning to coat both sides.
Prep the barbecue grill and wipe the grates with vegetable oil. Preheat to high. When the grill is very hot, put the tuna steaks on. Cook for 1 minute per side, turning once. Transfer the tuna to a large platter and allow to rest for 2 - 3 minutes.
Cut the tuna with a sharp knife into thick slices and arrange on individual plates, drizzling the sauce over the top. Sprinkle with thinly sliced green onion or chives and serve.
