Hen of the Woods (Maitake) Gravy

Look at a cluster of Hen of the Woods and you'll immediately know how this mushroom got its name. Covered with multiple, floppy, fingerlike projections this delectable mushrooms look like a big pile of feathers.

This "hen" has a mild flavor, but with deep, woodsy undertones. Sautéed in butter, it is absolutely superb. The ends crisp up wonderfully and this is one mushroom that doesn't lose its great texture - or flavor - when cooked.

Ingredients:

1 oz dried Hen of the Woods mushrooms

3 Tbsp butter or oil

1 Tbsp soy sauce

1/2 tsp fresh black pepper

2 cups chicken stock

3 Tbsp flour



Preparation:

Pour the heated stock over the hen of the woods mushrooms; soak for 20 - 30 minutes. Drain, reserving the soaking liquid. Chop mushrooms coarsely.

In a saucepan, heat the butter or oil, and add flour, whisking to combine thoroughly. Reduce heat to medium and cook for 2 - 3 minutes.

Very gradually, while whisking, add the soaking liquid to the flour and fat mixture. Continue to whisk until smooth. Add the mushrooms, soy sauce and black pepper, cooking over medium heat for 8  10 minutes or until mushrooms are soft and tender and the gravy has thickened to the desired consistency.

Excellent with mashed potatoes or your favorite meat or poultry dish.
