Lamb Shanks with Orzo
Orzo is a wonderful pasta that looks like large grains of rice. But it's actually made from semolina. It's delicately flavored and chewy, and absorbs any flavors it is cooked with, while retaining its firmness. Using flavored orzo adds a new dimension to the dish.

The lamb shank ends up tender and falling-off-the-bone delicious.

2 tablespoons extra virgin olive oil
3 onions, sliced
6 lamb shanks
1 28-ounce can tomatoes
3 teaspoons oregano
sea salt & freshly ground black pepper to taste
2 cups orzo, plain or flavored
2 cups hot chicken stock


Preheat the oven to 375 F.

Drizzle the oil in a large roasting pan. Add the onions and evenly distribute the lamb shanks in the bottom of the pan.

Cover with foil and roast for about 20 minutes.

Remove from the oven and add the tomatoes, oregano, salt and pepper. Toss the ingredients, then cover and roast for another 20 minutes.

While the shanks are roasting, heat the chicken stock. When the shanks are done roasting, add the orzo and the heated stock. Cover and roast for another 20 minutes.

Serve piping hot with steamed green beans.
