One-eyed Bouillabaisse
Incredibly tasty and nourishing, this aptly named soup will be a regular in your cooking repertoire. The egg that is poached in the broth resembles an eye, ergo the name of the dish. The Bouillabaisse is perfect for formal or informal occasions. This is a vegetarian version, for those who include eggs in their diet. Otherwise, omit the egg. and it's still delicious.

Cauliflower & Oyster Soup with Saffron
The subtly sweet flavors of cauliflower, oysters and saffron blend seamlessly together to create an elegant and delicately flavored soup that’s remarkably quick and easy to make. No cream or other thickening agents are used to create the light, but satisfying creamy texture, which is achieved by pureeing a whole head of tender-cooked cauliflower. If you think you’re too busy to cook, think again. This wonderful soup only takes about 30 minutes to make, most of which is unattended cooking time.

Salmon with Sea Beans & Soba Noodles in Lobster Broth
The taste of Sea Beans is quite mild, somewhat resembling that of asparagus or green beans, but their most distinctive trait is their crisp, almost crunchy texture and refreshing briny flavor. The first impression one gets when biting into sea beans is an intense burst of saltiness that fades quickly into a pleasantly tangy finish. After a brief blanching in boiling water, sea beans can be sauteed or used in a stir fry, just like green beans or asparagus.
