Quail in Rose Petal Sauce
This recipe is adapted from one developed by M.S. Milliken and S. Feniger and aired on the Food Channel. It's a "two-part" recipe, starting with the Rose Petal Sauce and going on to the recipe for the quail. It is an absolute delicacy, revealing flavors you may never have experienced before. The combination of the anise, roses, and chestnuts alone is sufficient to offer this dish absolute distinction. The addition of the quail and garlic is unforgettable. Make sure to use fresh quail if you can get them.

Cranachan is a dessert native to the Ireland and Scotland. It's made of a few simple ingredients and is easy to make, yet it's incredibly rich and indulgent. All Celtic countries seem to have a dessert that's a variation on this theme. It's probable that the English classic, trifle, evolved from this tradition. It certainly shares most of the same elements - sweetened whipped cream, some form of grain or cake, fresh fruit - and the local firewater, in this case, Irish whiskey!

If you prefer an alcohol-free cranachan, use a few drops of vanilla essence instead.

Grilled Mustard-Marmalade Glazed Chicken Wings
The glaze used here is pretty simple: mustard and marmalade, plus a few other ingredients. Any good quality mustard, from stone-ground to classic Dijon, will work – as long as it isn’t that bright yellow stuff. We used one of our new favorites, Founders Centenniel IPA Honey Mustard. It’s already got a subtle hint of honey with a mild hoppy bite from the Founders Brewing Co. India Pale Ale used to make it.
