Red curry paste, a staple of Thai cuisine, is an intensely flavored moist concentrated blend of red chiles, spices, and aromatics like lemongrass, lime leaves, shrimp paste, shallots, garlilc, ginger, or cilantro. Curry paste is most commonly stirred into coconut milk or broth to make the sauce for a variety of curry dishes, but has many other uses as well.
After opening, curry paste can be stored for a month or more in the refrigerator and up to 3 months in the freezer.
