Michigan Mojito
The Mojito, a cocktail with roots in pre-Castro Cuba, has recently become popular again. The classic version, made with white rum, is definitely a cool and refreshing summer drink.
We wanted to experiment with a version suited to our chillier northern climate here in Michigan. After much experimentation, here's what we came up with. Boy, was that fun!

Ingredients:
2 oz golden rum
1 oz Key Lime Juice
1 1/2 tsp Raw Cane Sugar, finely crushed
2 - 3 drips pure Michigan Peppermint Oil
2 oz soda water
Preparation:
Place Key lime juice, mint oil and sugar in a tall glass. Add the rum and stir until sugar is dissolved. Fill with crushed ice, top with sparkling water and a float of rum, if desired.
Garnish with a sprig of fresh mint and a wedge of fresh lime.
