Mrs. Bellofiore's Basil Pesto
This version of the classic Basil Pesto is simple, but delicious. It was contributed by the 83 year old mother of one of our associates who served it to her family every Thursday evening for many years.
She says that she hopes everyone enjoys it, but that all royalties must be paid in cash.

16 fl oz olive oil
8 oz walnuts
8 oz of fresh basil leaves
4 oz of good quality parmesan cheese, grated
1 oz of fresh chopped garlic
pinch of salt
pinch of pepper


Put the olive oil and walnuts into a blender or food processor. Blend or process until the walnuts are coarsely ground.

Add all other ingredients and blend or process together until the basil is very fine.

Toss immediately with hot, freshly cooked pasta. Top with additional grated parmesan if desired.
