Orzo Salad with Apricots, Pistachios & Ginger Oil
An aromatic, refreshing pasta salad using orzo. Very unusual and pretty. The almonds add crunch and flavor. Perfect salad for a luncheon.

8 ounces orzo
1 cup fresh apricots (about 4), peeled and diced
1 teaspoon chopped fresh coriander
ΒΌ teaspoon ground coriander
1/3 cup thinly sliced scallions
1/3 cup sliced toasted almonds
4 tablespoons ginger oil
Squeeze of half a lemon
Sea salt & freshly ground black pepper


Bring a medium-sized pot of salted water to a vigorous boil. Add the orzo and cook for about 10 minutes, or until tender but not mushy.

Drain immediately and rinse with cold water.


Place the orzo in a bowl and combine with fresh apricots, fresh and ground coriander, scallions, and almonds.

Toss with about 4 tablespoons of the ginger oil, until the orzo is just moist.

Season with salt and pepper. Squeeze with fresh lemon juice and mix.
