Paprika Roasted Potatoes
This recipe is also adapted from one by B. Smith: B. Smith's Entertaining and Cooking for Friends. The potatoes go just smashingly well with the salmon. They can be served hot, but with the salmon, try them at room temperature. My cousin's husband loves them chilled for lunch the next day with a salad.
Ingredients:
4 cups fingerling potatoes, unpeeled, scrubbed, and cut into one-inch cubes
¼ cup extra virgin olive oil
1 tablespoon chopped fresh rosemary
1 teaspoon paprika
½ teaspoon Sea salt
½ teaspoon Fresh Cracked Pepper
Preparation:
Combine all ingredients in a roasting pan. Toss thoroughly to coat the potatoes with all seasonings. Cover with plastic wrap and let the potatoes marinate for about a half hour. Preheat the oven to 350 degrees F.
Uncover the roasting pan and roast the potatoes for about 40 minutes, or until golden and crisp.
