Paprika Roasted Potatoes

Paprika Roasted Potatoes
This simple recipe is adapted from B. Smith's Entertaining and Cooking for Friends. Try them at room temperature, hot or even chilled. Either way, they are delicious.
Ingredients:

4 cups fingerling potatoes, unpeeled, scrubbed, and cut into one-inch cubes
¼ cup extra virgin olive oil
1 tablespoon chopped fresh rosemary
1 teaspoon paprika
½ teaspoon sea salt
½ teaspoon fresh cracked pepper



Directions:


Combine all ingredients in a roasting pan. Toss thoroughly to coat the potatoes with all seasonings. Cover with plastic wrap and let the potatoes marinate for about a half hour.

Preheat the oven to 350 degrees F.

Uncover the roasting pan and roast the potatoes for about 40 minutes, or until golden and crisp.
