The T-bone steak, like the Porterhouse, consists of a T-shaped bone with meat on each side. The larger side is from the strip loin and the smaller side contains the tenderloin. T-bone steaks are cut from the forward end of the short loin and contain a comparatively smaller section of the tenderloin than does the Porterhouse.
T-bone steaks are generally considered one of the highest quality steaks and like Porterhouse, the T-Bone Steak can be cooked in practically any way with excellent results. While ideal for grilling, it can also be broiled, sauteéd or pan-fried. The T-Bone is best when cooked to no more than medium.
